Helen’s Spring Alpine Salad

A light and tasty spring salad inspired by the Helen's Alpine Salad of the past. Think of it as a new classic!

Alpine Salad

Salt and pepper

1/2 pound spring spinach

1 cup candied red onions

1 1/2 cups sliced strawberries

1/3 cup Granola

Place spinach in a large bowl and lightly season with salt and pepper. Add candied onions and sliced strawberries
Toss salad and top with granola. Yields enough salad for four people.

 

Yogurt Poppy Seed Apple Cider Vinaigrette

6 egg yolks

2/3 cup apple cider vinegar

1 1/4 tbsp. salt

1/2 cup sugar

1/ cup lemon juice

1/2 tsp white pepper

1/2 gallon vegetable oil

1/4 cup poppy seeds

1 1/2 cups of Greek yogurt

Add all ingredents except vegetable oil, poppy seeds and togurt into a mixer with a whisk. Mix and then slowly blend in vegetable oil with mixer running. Fold in poppy seed and yogurt.
